Pakkavada Baked and Healthy version

Pakkavada is one of the favorite tea time snack of Keralites. My mom in law prepares it every time we go home as it is my hubby's favorite snack... He loves it so much that he keeps on munching it at home. Pakkavada for non keralites is a besan and rice flour mixed snack deep fried in oil. Since its deep fried, I do not prefer my hubby having it at all times... I make different kinds of healthy snacks for my husband and he loves them all and finishes them without complaints even when it doesnt turn out well... But I know that his favorite is still pakkavada and I started feeling guilty for not letting him have it too much... Now a days I bake many dishes instead of deep frying it and So I thought why not try this on pakkavada and check... How ever I did not have rice flour with me. So I used wheat flour along with Besan and Yes, it did work !! My baked pakkavada turned out great and my hubby loved it !!! So thought of sharing the recipe in my blog...







Baked Pakkavada:

Prepping time: 15 min
Cooking time:  20 - 25 min
Total Time: 35 - 45 min

Ingredients:

1 cup Besan (Gram Flour)
1 cup Wheat Flour - Use roasted rice flour if you have 
1 tbsp Chilli Powder 
1 tbsp Sesame Seeds  
Salt
Warm Water
Oil 
4 - 5 Curry Leaves

Equipment needed:

Idiyappam press



Oven

Prepping:

Step 1: Sieve wheat flour and besan together and keep aside. The below pic is before sieving. 



Step 2: Add chilli powder, sesame seeds and salt to the above mixture.
Step 3: Add warm water slowly to the mixture and make a smooth dough.


Step 4: Place parchment paper on the Baking Tray. 

Step 5: Fill the idiyappam press with the dough and press slowly. The dough will come out flat shaped. Arrange the flat shaped dough pieces on the baking tray. Leave space in between the pieces. 










Method of Preparing:

Step 1:

Preheat the oven to 350 F.

Step 2:

Place the Baking Tray in the middle rack of the oven.

Step 3:

Bake for 10 min and then remove the tray from the oven and turn each piece. Place the tray back inside the oven and let it bake for another 10 min till it becomes crispy.

Step 4:

Once Baked, heat some oil in a pan and fry curry leaves for a min and pour the oil - curry leaves mixture over the pakkavada. Serve hot with Tea.
